I am looking for a healthy substitute for marshmallows. As in, G makes Fiber One Bars (instead of Rice Krispie Bars) and adds dried apples, almonds, and cinnamon and it's a great breakfast bar. BUT, to hold everything together, he still uses marshmallmows. Is there a healthy alternative out there? We thought about honey, but honey doesn't really "dry", it kinda stays sticky, plus that might change the flavor...anyway, if anyone has any ideas, we'd be much obliged.

EDIT: Apparently, honey WILL work. Who'd a thunk it.
Dupont Circle, Washington, D.C.: My boyfriend likes to make his own breakfast bars with Fiber One, dried apples, sliced almonds and cinnamon. They're healthy except for the marshmallow that he uses to hold them together. (Kind of like a Rice Krispie Treat.) Do you -- or anyone out there -- know of a healthier alternative to hold the cereal together? We thought about honey, but we were thinking that it doesn't really "dry out" and stays sticky ... any help would be much appreciated!
Kim O'Donnel: Honey will work, as would molasses. I've got a granola recipe that uses both and perhaps you could fiddle around, see what works...
